Edge Grain or End Grain boards, Which one is right for you?

Edge Grain

For the most part i think its what you appeal to.On a edge grain board the "edge" of the board is facing up, this is essentially what you will be cutting on.They are typically cheaper than a end grain board because of the assembly process.The edge grain boards will dull a Knife more quickly than a end grain board because you are cutting on the edge of the board,the grains are very tight together,best way i can think of how to describe it.

End Grain

End grain boards will tend to leave your knife a little sharper for a longer period of time due to the fibers spreading some when you cut on it and then they will kind of close up somewhat,it will still show some scratches over time as will the edge grain board.End grain boards require a little more frequent care than a edge grain because the fibers tend to soak up more oil.
